Who doesn’t love a good veggie burger? I usually make them from ground lentils but this version can be made in a quarter of the time. I sometimes serve these paleo style in a lettuce wrap or on gluten-free bread. I love this mayo from Paleo Table, I make it once a week for sandwiches, sauces and slaws.
Here’s a yummy fennel slaw that I make often. Fennel is great for digestion, freshens breath (which is great if you’re eating lots of onions and garlic!) and can provide relief from anemia, indigestion, gas, respiratory disorders and even menstrual disorders!
1/2 cup shredded or thinly sliced fennel
1/3 cup shredded carrot
1/2 cup shredded green cabbage
1/3 cup shredded purple cabbage
handful chopped parsley
salt and pepper to taste
2-3 tbs of your favorite egg-free mayo (you can also use oil and vinegar)
Toss together and serve with summertime favs
