Who doesn’t love pancakes?! I have plenty of fond memories of my papa making them for me as a child. Here is a hearty superfood version that incredibly nourishing and satisfying and unlike gluten pancakes will give you an energy boost and not leave you feeling sleepy and lethargic. You can also add some maca root powder for a sexy sunday morning with your sweetie. Maca adds a delicious rich flavor while also being a well know aphrodisiac. Buckwheat is naturally gluten-free and is packed with many essential nutrients. Hemp seeds are one of the most amazing super foods know to humankind providing easily digested proteins, essential fats (omega 3 &6) vitamin B6, B12 and a whole host of minerals and enzymes.
These are great with a drizzle of honey or agave, coconut oil and if you want a decadent protein boost – some raw almond butter. You can also get creative with these in the pan. I sometimes add blue berries, cacao nibs or raisins to the un-cooked side of the pancake just before flipping. Delicious!
For some reason the 1 cup of plant milk and 1-2 tsp maca powder is not showing up in my ingredient list so please add those if making! apologies I am working to get that resolved asap!
