Gluten-Free Vegan Pizza

Here’s a yummy pizza recipe from our vegan cheese making class! The crust is made from chickpea flour and only takes minutes to make. Top with tomato sauce, fresh basil and this easy, melty moxerella cheese and you’ve got delicious home-made gluten free pizza in about a half hour.
For Crust:
1 cup garbanzo bean flour
1/2 – 3/4 cup water
1 tsp baking soda
1 tbs olive oil
1 tsp salt
1 tsp italian herbs (optional)
1 tbs coconut oil or high heat oil for pan
For Sauce:
2-3 large tomatoes diced
1 minced garlic clove
1/2 diced brown onion
1 tbs tomato paste (optional)
Salt and pepper to taste
1 tsp coconut sugar
1 tbs itailain herbs or fresh parsley, basil
1 tbs coconut or high heat oil for sautéing
For Cheese
1/4 C. raw soaked cashews
1 C. hot water
2  T. + 1 t. tapioca starch
1 T. extra virgin olive oil (optional)
1 small garlic clove, minced
3/4  t. sea salt
1 t. fresh lemon juice
DIRECTIONS
1. For dough, wisk all ingredients together in a mixing bowl until creamy batter forms. In a fry pan or skillet heat oil over medium heat and pour batter in. Cook for about 5 min each side like a pancake. recipe makes about four 5 inch crusts or two 8 inch crusts.
2. For sauce – sauce saute onion and garlic until translucent. Add remaining ingredients and cook on high heat for 15-20 min
3. For cheese – Blend all ingredients together in a high-speed blender until completely smooth, about 1 minute. Then pour into a small saucepan and cook, stirring constantly over medium high heat so you don’t burn the cheese to the bottom of the pot. Keep cooking and stirring until really thick and stretchy, then turn off heat and let cool for a few min.
4. Assemble pizzas with sauce and dollops of cheese and fresh basil and bake at 400 for 8-12 min. Enjoy!
